Starday Whole Bean Coffee

A rare, single-origin microlot, honey-processed and regeneratively grown by the women of Finca Santa Maria, Colombia. Notes of honeysuckle, lemongrass, and apricot. A portion of proceeds supports the Center for Mind-Body Medicine, whose work helps clinicians, educators, and community leaders bring practical tools for self-care, resilience, and healing to the people and communities they serve.

This coffee my mother, Phyllis, passed away twenty years ago. Yet we still celebrate the day she returned home to the stars. In our family, we call this day her Starday.

Regeneratively Farmed

Grown beneath a thick biodiverse canopy of native and fruit trees near Colombia’s Chicamocha Canyon, Finca Santa Maria epitomizes environmental stewardship. Activated biochar enriches the soil with healthy microorganisms, which result in complex nutrients and flavors in the coffee. Post-harvest processing is handled with precision using state-of-the-art equipment, including an eco-washer, optical sorter, wire mesh drying deck for excellent air circulation, along with both solar and mechanical dryers.

This farm holds earned the Con Manos de Mujer seal, recognizing their leadership in environmental preservation, ethical labor, and women’s empowerment.
